Christmas Rainbow Poke Cake
Ingredients
-2 baked 8- or 9-inch white cake layers, cooled
-1 pkg ( 3 oz) raspberry flavor Jello
-1 pkg (3 oz) lime flavor Jello
-2 c. boiling water
-8 oz. Cool Whip, thawed
Directions
Place cake layers, top sides up, in two clean 8- or 9-inch layer
pans. Prick each cake with fork at 1/2 inch intervals.
Meanwhile, dissolve each package of Jello separately in 1 cup of
the boiling water. Carefully pour raspberry Jello over one cake
layer and lime Jello over the second cake layer. Chill 3 to 4 hours,
Dip one cake pan in warm water for 10 seconds (usually a bit longer);
then unmold onto serving plate and top with about 1 cup of Cool
Whip. Unmold second layer carefully onto the first layer. Frost
top and sides with remaining topping. Chill. Keep leftovers refrigerated. Not only cool and refreshing,but beautiful to look at.
