FRIED OYSTERS WITH TARTAR SAUCE
Ingredients
1 lb. shucked oysters(medium-sized)
1 c. flour
1 tsp. salt
1/4 tsp. black pepper
2 eggs
1/2 c. milk
1 1/2 c. cracker crumbs
oil
1 1/2 c. tartar sauce
Yield: Approximately 4 servings, 6 to 7 oysters each.
Directions
Rinse oysters in cold water. Drain well on paper towel.Combine flour, salt and pepper. Mix well and set aside. Beattogether eggs and milk. Set aside. Dip oysters in flourmixture, shaking off excess flour. Dip flour oysters in eggmixture. Roll oysters in cracker crumbs, patting each oysterto hold the crumbs.
Heat oil in a deep fryer or a large frypan to 350 degrees.(Oil should be approximately 2-inches deep for deep frying.)
Fry oysters in batches in hot oil until golden brown. Ifnecessary, turn oysters in oil to brown on all sides. Serves 6to 7 oysters per person with tartar sauce.
