Mushroom Soup
Ingredients
-4 slices bacon
-2 tsp minced garlic
-1 1/2 lbs sliced mushrooms
-1 tsp thyme
-1/2 tsp rosemary
-4 cups beef broth
-1/2 tsp each salt and pepper
-1/2 cup cream
-1/4 cup fresh parsley
Direction
Cook bacon til lightly browned but not crisp. Add garlic. Cook and stir about 3 minutes.
Stir in mushrooms and cook til they’re tender. Add thyme and rosemary. Cook 30 seconds. Add broth, salt and pepper and bring soup to a boil. Reduce heat to low, cover and simmer.
Transfer half the soup to a blender and pulse til smooth. Return pureed soup to pot with remainting soup and mix well. Add cream and parsley.
This is the best ‘shroom soup you’ve ever had.
