Veggie Muffins Recipe
ingredients
-1/2 cup wholemeal self-raising flour
-1/2 cup white self-raising flour
-1/3 cup soft brown sugar
-1/4 cup mushed (or puree’d) broccoli or pumkin or any sort of veggies, even combinations together
-80 g melted margarine (polyunsaturated is recommended)
-1 egg lightly beaten
-140 g apple sauce smooth or chunky
Directions
Preheat oven to moderate 180°C/350°F. Brush eight 1/3-cup capacity muffin spaces in muffin tin with oil.
Sift flours into a medium bowl. Add sugar and veggies.
Make a well in centre. Add combined margarine, egg and apple sauce. Using a metal spoon, stir until the mixture is smooth, but do not overbeat.
Divide mixture between the muffin tins. Bake 15-20 minutes or until lightly golden. Serve muffins warm or cold. Store in airtight container for up to two days.
